How to cook the right amount of rice for one person

“One part rice, two parts water” still leaves you guessing the portion. Here's the actual amount.

Scooping a single portion of cooked rice out of the rice cooker

Rice recipes are almost always written for a family, which means "one part rice, two parts water" turns into three cups of rice when you only wanted one bowl's worth. The ratio isn't the hard part, the portion size is.

The right amount for one person

A single serving of cooked rice is about 1/2 cup uncooked, which becomes roughly 1.5 cups cooked, enough for one real bowl, not a side-dish sliver. The ratio stays the same no matter the quantity: 1 part rice to 2 parts water for white rice, slightly less water for a fluffier result.

Small-batch rice, done right

  1. 1/2 cup rice, 1 cup water, a pinch of salt. Rinse the rice first if you want it less sticky.
  2. Bring to a boil uncovered, then drop to the lowest simmer and cover.
  3. Cook 15-18 minutes without lifting the lid. Lifting it lets steam escape that the rice needs to finish cooking.
  4. Rest, covered, off the heat, for 5 minutes, then fluff with a fork.

Small batches actually cook a little faster and more evenly than large pots, since there's less rice for the heat to reach through.

Why the "just use less water" instinct backfires

It's tempting to eyeball a smaller pot with less water and assume it scales the same way. It mostly does, the real risk with small batches is evaporation, since a small amount of water in a wide pot can boil off faster than the rice finishes cooking. A tight-fitting lid and the lowest possible simmer fix this, not more water.

What to do with rice you didn't mean to make extra of

If a full cup ends up cooked anyway, that's not waste, it's tomorrow's fried rice. Cooked rice actually fries better the next day, once it's had time to dry out slightly in the fridge, so a slightly-too-big batch tonight is a genuine head start on a completely different dinner, not leftovers you're obligated to eat as-is.

Recipes that already do this math for you

Every recipe in the cookbook lists exact single-serving amounts, rice included, so there's no scaling down to figure out.

Quick questions

How much uncooked rice is one serving?

About 1/2 cup uncooked rice, which cooks up to roughly 1.5 cups, enough for one full bowl.

What's the rice-to-water ratio for a small batch?

The same as a large batch: 1 part rice to 2 parts water for white rice. Use a tight lid and the lowest simmer to avoid the water evaporating before the rice finishes.

What happens if you lift the lid while rice is cooking?

It lets out steam the rice needs to finish cooking, so keep the lid on for the full 15-18 minutes and only check once the rest period is done.

What should you do with rice you accidentally cooked too much of?

Treat it as a head start on tomorrow's fried rice, since rice actually fries better the next day once it's dried out slightly in the fridge.
