How to cook steak for one, without wasting the rest of the pack

One good steak is a complete dinner, not a smaller version of one meant for two. Here's how to actually cook it.

A single steak searing in a pan, tongs lifting the edge to check the sear

Steak is one of the few dinners that genuinely scales down without losing anything. One good steak, cooked well, is a complete, satisfying meal for one, not a smaller version of a dinner meant for two.

Which cut to buy for one

A single steak, 6-8oz, is a normal single grocery-counter purchase, most butchers and supermarkets will cut exactly that on request even if the display trays show bigger portions.

How to actually cook one steak well

  1. Take it out of the fridge 20-30 minutes before cooking. A cold steak straight into a hot pan cooks unevenly.
  2. Pat it completely dry, then salt generously. A wet surface won't brown, it'll steam.
  3. Get the pan properly hot before the steak goes in. A splash of water should evaporate almost instantly.
  4. Sear 2-3 minutes a side for medium-rare, depending on thickness, then use a thermometer if you have one, 130-135°F (54-57°C) for medium-rare.
  5. Rest it for 5 minutes before cutting. This matters more for steak than almost anything else, skipping it loses real juice onto the plate.

What to do with the rest of the value pack

Steak is often sold in multi-packs even when a single piece is all you need for tonight. Freeze the extra portions individually, wrapped separately, the day you buy them, not the day you get around to cooking them. A steak frozen fresh cooks up almost identically to one bought that day; a steak left raw in the fridge for four days waiting to be used does not.

What actually goes with it

A single steak dinner doesn't need three side dishes built from scratch. One roasted or pan-seared vegetable and something starchy, rice, a pan-fried potato, bread to catch the juices, is a complete plate. This is one of the few "restaurant" dinners that's genuinely simpler to make well for one person than for a table of four, since there's only one piece of meat to time correctly.

Quick questions

What size steak should one person buy?

6-8oz is a standard single portion. Most butchers will cut this size on request even if the pre-packed trays show larger cuts.

How long should you rest a steak before cutting it?

About 5 minutes. This lets the juices redistribute through the meat instead of running out onto the plate.

Which cut of steak is easiest to cook for one person?

Ribeye or sirloin, since they're forgiving on timing and hard to ruin; flat iron or skirt steak are cheaper and cook fast but are best sliced against the grain.

What should you do with the rest of a steak multi-pack?

Freeze the extra portions individually, wrapped separately, the day you buy them, not the day you get around to cooking them.
