Pasta for one: how much to actually cook

2oz is a real serving, most people eyeball closer to double. Here's how to cook it right, and what to put on it.

A single-serving bowl of creamy pasta topped with parmesan, held in one hand

Pasta is one of the few dinners solo cooks actually reach for constantly, cheap, fast, forgiving, and it's also one of the easiest to badly overcook a portion of, since the box's serving size and a real single serving rarely match.

How much pasta is actually one serving

2oz (about 56g) of dry pasta is a standard single serving, roughly the diameter of a quarter held against a bundle of spaghetti, or a slightly rounded 1/2 cup of short shapes like penne. Most boxes list servings at 2oz, but it's easy to eyeball closer to double that without a scale.

Cooking a small batch without a full pot

  1. Use a smaller pot than instinct suggests, just enough water to cover the pasta by an inch or two, not a full stockpot's worth for one small portion.
  2. Salt the water properly anyway. A smaller amount of water needs proportionally less salt, but skipping it because the batch is small is the most common single-serving pasta mistake.
  3. Start checking a minute or two before the package time. Smaller pots and less water can cook slightly faster than the package assumes.
  4. Save a splash of the starchy cooking water before draining. It's what actually makes a small-batch sauce cling properly instead of sitting separately from the noodles.

Sauces that don't leave you with three unused ingredients

What to do with a box that's now mostly empty

An opened box with a random amount left is a common source of pantry clutter. Transferring the rest to a clip-sealed bag or container, rather than leaving the torn box, keeps it usable and visible for next time instead of forgotten at the back of the shelf.

Yes, a smaller amount of water needs proportionally less salt, but skipping it because the batch is small is the most common single-serving pasta mistake.
